Named in honor of:toshi-ueki — founding partner, Blue Ribbon Sushi
Ueki is the most intimate expression of the sushi tradition that Toshi Ueki brought to Blue Ribbon. The 12-seat counter format and omakase-only structure reflect the kappo dining culture Toshi trained in as a teenager in Kyoto. Every element of the restaurant — the course progression, the sourcing, the sake program — is a deliberate tribute.
