Name Origin
“Blue Ribbon” is the English translation of “Cordon Bleu” — the French term for a blue ribbon awarded as first prize. The name directly references the brothers’ training at Le Cordon Bleu Paris and signals their foundational commitment to top-quality food and technique.

History & Timeline
1992 — The Original bruce-bromberg and eric-bromberg, both graduates of Le Cordon Bleu Paris, open Blue Ribbon Brasserie at 97 Sullivan Street in SoHo. Open until 4am daily with no reservations — a deliberate contrast to the fine-dining establishment. Within months it becomes the unofficial clubhouse for New York chefs.

1994 ken-bromberg begins representing Blue Ribbon as outside counsel — a relationship that will last 30+ years.
1995 bowie-fu joins as a waiter. Blue Ribbon Sushi opens at 119 Sullivan Street in partnership with toshi-ueki, a master sushi chef who moved to the US in 1969. Ueki brings four decades of Japanese culinary tradition.
2002 donna-lachman joins as CFO. She will remain for 23+ years.
2007 ken-bromberg joins full-time as General Counsel & COO, transitioning from outside counsel to the core leadership team.
2014 martin-brock, a German-born chef with experience at Gary Danko (SF) and multiple NYC fine-dining kitchens, joins as Executive Chef. He will go on to open 10+ Blue Ribbon locations.
2016+ Las Vegas expansion begins with The Cosmopolitan partnership, bringing sushi-bar-grill to the Strip. Blue Ribbon enters the resort hospitality market.
2020s — Toshi Ueki passes toshi-ueki dies. A 12-seat omakase restaurant named Ueki (West Village) is opened in his honor, preserving his legacy within the Blue Ribbon family.
February 2026 The Cosmopolitan Las Vegas location closes. Regional director Chiachi Kuo continues to oversee remaining Vegas and West Coast operations.
